Summer refreshing salad

In the warmer months, it’s great to focus on foods that help keep us hydrated, light and energised. Consider indulging in fruits like watermelon, berries and citrus varieties. They’re not just delicious; they’re packed with water, perfect for keeping us hydrated in the heat.

And don’t forget your leafy greens and veggies! They’re like a nutrient powerhouse. They offer a bunch of vitamins, minerals and antioxidants that keep us feeling strong and healthy. Plus, they’re light on the stomach, which is just what we need when the weather’s hot.

When it comes to grains, choosing lighter options like quinoa or bulgur can make a huge difference. They’re easier on our digestion, preventing that heavy, sluggish feeling, which can initiate inflammation.

For a refreshing twist, incorporating cooling foods like cucumbers and mint into your meals can be a game-changer. They bring a natural coolness to our bodies, which feels amazing in the summer heat.

And here’s the thing about proteins and healthy fats—they keep us feeling satisfied without making us feel weighed down. It’s all about feeling energised and light during the summer.

One more thing—instead of those sugary drinks, try infused water or herbal teas. They keep us hydrated without the extra calories.

So, these summer foods aren’t just about flavour—they’re about keeping us feeling refreshed, hydrated and full of energy!

Here is a recipe to help you stay cool, satisfied and hydrated.

Watermelon Mint Salad

Ingredients:

4 cups cubed watermelon
1 cucumber, thinly sliced
1/4 cup chopped fresh mint leaves
2 tablespoons fresh lime juice
A pinch of salt (optional)
Feta cheese (optional, for garnish)

Instructions:

In a large mixing bowl, combine the cubed watermelon and thinly sliced cucumber.
Add in the chopped fresh mint leaves.
Squeeze fresh lime juice over the mixture.
Gently toss everything together until the lime juice is evenly distributed.
Sprinkle some fresh pepper.
Serve the salad chilled or at room temperature. You can garnish with a bit of feta cheese for an extra zing. Boost it with rocket, basil, mixed leaves or coriander.
This salad is a winner and is the perfect embodiment of summer—hydrating watermelon, cooling cucumber and the refreshing hint of mint, all combined to create a delightful dish that’s light, energising and bursting with flavour!
